Buyer planning guide
How do I turn restaurant prep-station workflow into an equipment inquiry?
Brief JINYU on ingredient flow, reserve storage, worktop use and pan arrangements, with separate equipment lines for salad, pizza and sushi preparation.

What should I record about the prep station before choosing equipment?
Start with the food assembled at the station and the steps staff perform there. List ingredient retrieval, portioning, assembly and the handover of finished dishes in working order. For each step, identify the container used and whether the ingredient comes from reserve storage or a pan at the station. Attach the menu references that explain which ingredients are needed together.
Divide the equipment request into those jobs. JINYU lists stainless upright storage, undercounter and worktop fridges, salad preparation counters, pizza ingredient counters and refrigerated sushi displays. These families address different parts of the workflow. Mark each requested unit on the kitchen plan and name the task beside it. A description such as "prep refrigeration" leaves the reply to guess whether you need reserve storage, a preparation surface or accessible ingredient pans.
How do I separate reserve storage from ingredients used during service?
Record reserve ingredients in their actual containers, including lids and any trays used to move them. Give the outside dimensions and the quantity held at one time. On a separate list, record the ingredient pans used during assembly and how staff replace them. Link each pan to the reserve container that supplies it so the inquiry shows the movement between storage and service.
For upright storage, identify chilled or frozen use and the requested shelf or tray format. For storage below a workstation, describe the same containers against the undercounter or worktop fridge family. Neither family publishes a verified model table on its JINYU category page. Request a named configuration, usable internal dimensions and its operating specification. Door count describes an arrangement; it does not establish how many of your containers the cabinet will hold.
When should I request an undercounter fridge and when a salad prep counter?
Describe the surface already available at the station. If refrigeration will sit beneath a fitted counter, send the counter drawing and identify its support structure. If the request includes an integrated worktop, state the preparation tasks performed on it and any equipment placed above it. Ask the reply to distinguish the cabinet from the work surface and identify the installation requirements for that combination.
For salad or sandwich assembly, list the ingredients presented in pans and show where cutting and assembly take place. JINYU's salad preparation counter family asks buyers to specify pan format, cutting surface, lid arrangement, refrigerated storage and cleaning access. Put those fields in the request rather than carrying over a generic undercounter-fridge description. Ask which pans, supports and cutting components belong to the proposed configuration and request their arrangement drawing.
What belongs in a pizza ingredient-counter inquiry?
List the toppings used together, the pan format proposed for each and the intended replenishment method. JINYU's pizza ingredient-counter table lists JY-PZ955 with three pans at 955 × 404 × 450 mm and JY-PZ1655 with seven pans at 1655 × 404 × 450 mm, in width × depth × height order. Use the full model reference when discussing either end of that listed range.
Ask for the pan dimensions, pan depth and included accessory list against the selected model. The published pan count does not identify pan size. The category describes a chilled ingredient counter, with a supporting table or storage requirement discussed separately. If you also need a dough preparation surface or refrigerated storage below, add that requirement explicitly. Keep each component visible in the proposal instead of assuming the ingredient-counter dimensions describe a complete prep table.
How should I describe a sushi station in the same equipment brief?
Give the sushi station its own line even if it shares reserve storage with another preparation area. State which ingredients occupy the display, how many separate pan positions are requested and where staff assemble and hand over dishes. Show the intended support surface on the kitchen plan and describe access for replenishment and cleaning. Request the selected model's installation information against that position.
JINYU lists JY-SU1160 as a four-pan sushi display at 1160 × 420 × 315 mm and JY-SU1690 as a seven-pan display at 1690 × 420 × 315 mm. Those are external dimensions. Ask for the usable pan arrangement and included accessories separately. Keep the ingredient storage requirements supplied by your kitchen team with the request for the proposed operating specification; the dimensions and pan count do not answer that temperature question.
What workflow and site information should accompany the equipment lines?
Mark where staff stand, where replacement containers arrive and where used pans leave the station. Show adjacent cooking equipment, walls, doors and fitted furniture on the same plan. Add photographs with matching position labels. Describe the cleaning tasks that need access to lids, pans, work surfaces and cabinet interiors so the response can address the proposed arrangement with its drawings.
Send the site's voltage, frequency and phase information beside the destination and receiving details. Request model-specific electrical documents and installation requirements for each proposed unit. When comparing an ingredient counter with a salad prep counter, retain separate lines for supporting furniture, refrigerated storage and accessories. This lets the kitchen designer review the complete station while purchasing can still see which components are included in each response.
What should I send JINYU, and how should I read the reply?
Send JINYU, Shaanxi Jinyu Kitchenware Co., Ltd. (陕西金宇厨具有限公司), the station workflow, ingredient and container lists, pan requirements, reserve quantities and equipment positions. Include the requested unit quantity on each line, any shortlisted full model references, the kitchen plan, photographs, electrical information and destination. Ask the response to connect each proposed model to the task it will perform.
Review the reply in workflow order: reserve storage, retrieval, ingredient presentation, assembly and replenishment. Match each model with its drawing, operating specification, usable storage layout and accessory scope. Record a proposed replacement beside the original reference and revisit the affected task. Keep the final equipment schedule with the workflow and returned documents so the purchasing handover preserves the station arrangement that was reviewed.
